100% Nero d’Avola. Soft pressing and destemming from 10 up to 15 days, depending on the vintage. The extraction takes place through traditional pumpings. Fermentation temperature 26°C. After malolactic fermentation, wine is aged 4 months in stainless steel tanks, then in bottle for another 4 months.
Another ridiculous value from Beaujolais! 100% organically-farmed Gamay, from vines on pink granite with an average age of 55 years (one plot is over 80 years old!). Just gorgeous fruit here balanced perfectly with floral notes and the slightest bit of structure, and just as good with food as on its' own.
100% sustainably farmed Malbec from the subzone of La Consulta. The vines are 70 years old and sit at an altitude of 4,430 feet on alluvial soil with a rock foundation and top layers of sand. The fruit is double sorted at first, only the best bunches are kept for their wines.

This white originates from the deep clay loam soils of the Lost Slough vineyard, located on the southernmost part of the Clarksburg AVA - a site that benefits from cool breezes and good diurnal temperature variation, meaning the grapes retain excellent freshness.
100% certified organic and biodynamic Montepulciano grown on traditional capanne, or pergolas, in the Peligna valley. Handpicked fruit, fermented with native yeasts and aged solely in cement. Bottled unfined and unfiltered with minimal sulphur additions. Vegan. ‘ The string on the label is made from wool from the estate’s own sheep!
A classic unspecified blend of Malvasia del Lazio, Trebbiano Toscano, Malvasia di Candia, Bonvino, Bellone. The fruit is hand harvested from estate-owned vineyards around the winery, and all farming is practicing but uncertified organic. Fermented and aged in stainless steel.
